Shallots are a separate member of the onion family and not baby onions like a lot of people think, however they are probably as old as the onion having been referred to by the Romans. They have a delicate flavour and dissolve easily which makes them ideal for sauces. Coq au Vin which is normally made with small onions should be substituted with shallots to make a delightful change. They have the same medicinal properties as onions which include being beneficial to the digestive tract and the immune system.
