Latin Name : Salvia officinalis from the family Labiate. The name Salvia is a derivative of the Latin ‘salveo’ which means I save or I heal. An ancient proverb states ‘how can a man grow old with sage in his garden?’
Native once to Spain and western Yugoslavia it is now widely spread around the Mediterranean.
Sage was used well by both the Greeks and Romans and also highly valued by the Chinese whereby they would trade 3 chests of Chinese tea for one chest of sage leaves. This is also a strong culinary herb, which if used with discretion adds a lovely flavour. Works particularly well with rich, fatty meats, such as game, pork and sausages.
