These were grown widely in Ancient Egypt. They were enjoyed by us in Britain in the Dark Ages but then became unpopular with the fickle aristocracy in the 16th and 17th centuries, yet were still used extensively in rural communities. Place names such as Leighton Buzzard are derived from the word leek yet we most associate this vegetable as the national emblem for Wales. Leeks are wonderful in soups such as Cock-a-leekie and Crème Vichyssoise. Leeks are diuretic, antiseptic and very good for a healthy digestive tract.
