Latin Name : Anthriscus cerefolium
From the family Umbelliferae Native to the Middle East, the Caucasus and South Russia, believed to have been brought to Britain by the Romans.
Cultivated in warm climates where it can be found growing wild. Mostly used in French cuisine but becoming more popular. Excellent with vegetables, salads, soups, chicken, white fish and egg dishes. Has a delicate parsley flavour with a hint of aniseed. The leaves can be eaten raw, as they are rich in Vitamin C, carotene, iron and magnesium.
