This is a member of the cabbage family, Brassica olerace. Originated in China and found its way from Spain to England via the trading routes. Contains potassium, iron and zinc and is a good source of vitamins A and C. Like broccoli it must not be overcooked as this greatly reduces the nutritional benefits. It also turns grey and becomes quite unpalatable. Best steamed either whole or in florets and then there is the old favourite cauliflower cheese.
